Kimchi Stew

Ingredients

  • 1 Cup Classic Kimchi
  • 1 Tablespoon Seasame Oil
  • 1/2 Yellow Onion, Sliced
  • 2 Cloves Garlic, Minced
  • 1 Teaspoon Sugar
  • 2 1/2 Cups Chicken Stock
  • 1/4 Cup of Kimchi Juice
  • 1-2 Tablespoons Gochugaru
  • 1 Tablespoon Soy Sauce
  • 1 Green Onion

Instructions

  1. Add Sesame oil to a pot over medium heat. Add in onion, garlic, Classic Kimchi, and sugar. Cook for about 3-4 minutes. Stir often to ensure even cooking. Add in Chicken Stock, then bring to a boil.
  2. Once stew begins to boil, add in Kimchi juice, Gochugaru, and Soy Sauce. Cook for an additional 8 minutes or to desired stew consitency.
  3. Serve in bowls.
  4. Enjoy

Notes

* Not a fan of heat? Try switching out Classic Kimchi for Mild Kimchi and enjoy a more subtle kick of flavor.
